Coconut Protein Lava Mug Cake

Ingredients:

  • 1 scoop vanilla or coconut protein powder

  • 1 tbsp coconut flour

  • 1 tbsp unsweetened shredded coconut

  • 1/4 tsp baking powder

  • 1 egg (or flax egg for vegan)

  • 2 tbsp milk of choice (almond, oat, coconut, dairy…)

  • 1 tsp coconut oil or butter, melted

  • 1/2 tsp vanilla extract

  • 1 square dark chocolate or 1 tsp coconut butter (for the lava!)

Instructions:

  1. In a microwave-safe mug, combine the protein powder, coconut flour, shredded coconut, and baking powder.

  2. Add the egg, milk, coconut oil, and vanilla extract. Stir well until smooth. If the batter feels thick, add a splash more milk.

  3. Press a square of dark chocolate (or coconut butter) into the center of the batter. Don’t mix it in!

  4. Microwave on high for 60–90 seconds. Start with 60 and check—microwaves vary!

  5. Let it cool for a minute, then dig in and enjoy the gooey coconut-chocolate magic.
