Ingredients:
- 1 scoop vanilla or coconut protein powder
- 1 tbsp unsweetened shredded coconut
- 1 egg (or flax egg for vegan)
- 2 tbsp milk of choice (almond, oat, coconut, dairy…)
- 1 tsp coconut oil or butter, melted
- 1 square dark chocolate or 1 tsp coconut butter (for the lava!)
Instructions:
- In a microwave-safe mug, combine the protein powder, coconut flour, shredded coconut, and baking powder.
- Add the egg, milk, coconut oil, and vanilla extract. Stir well until smooth. If the batter feels thick, add a splash more milk.
- Press a square of dark chocolate (or coconut butter) into the center of the batter. Don’t mix it in!
- Microwave on high for 60–90 seconds. Start with 60 and check—microwaves vary!
- Let it cool for a minute, then dig in and enjoy the gooey coconut-chocolate magic.
